    The seventh annual Jimmy Taylor Sr. Memorial golf tournament is June 16 at the Edgewater Golf Club located at 2380 Catawba Ridge Boulevard.

    The format is captain’s choice team with a combined handicap. Check-in is at 10 a.m. The shotgun start is at 1:30 p.m.

  • Woman arrested for arson

    A Lancaster woman was arrested this week for setting a fire inside her apartment.
    Tammy Lynn Williams, 45, 1518 Westway Apartments, was charged with arson in connection with a fire that burned her apartment on Tuesday, May 22, according to a Lancaster County Sheriff’s Office press release.

  • Two teens arrested in hit and run

    A tip from the community led to the arrest of two teenagers in a hit and run that injured two pedestrians last weekend.
    Brett Daniel Wright, 18, and Joshua Neal Barton, 19, both of 1174 Chase Madison Drive, were arrested Tuesday, May 22, and each charged with attempted murder, according to a Lancaster County Sheriff’s Office press release.

    Recently, my husband and I took a little vacation to Puerto Rico.  Getting away to a tropical island for a little R&R was a most welcome treat.
    Puerto Ricans are friendly, charming and very proud of their beautiful island, and rightly so. Majestic beaches, beautiful weather, the ancient rain forest, El Yunque are just a few of the reasons to fall in love with Puerto Rico.

  • Puerto Rican Shrimp and Crab Empanadas

    Sauce Ingredients
    1 tablespoon olive oil
    ½ cup finely chopped sweet onion
    ½ cup finely chopped red bell pepper
    1 teaspoon Sazon seasoning
    3 tablespoons tomato paste
    1 ½ to 2 cups stock, (chicken, vegetable or fish)
    ½ pound large shrimp, peeled and deveined
    5 oz. lump crabmeat
    4 tablespoons finely chopped cilantro
    Sauce Directions
    u Heat a 10-inch skillet over high heat until hot. Add the oil and sauté the onions and pepper for 2 to 3 minutes or until softened.

  • Caribbean Confetti Salad

    4 to 6 red lettuce leaves, stems removed, but left as whole as possible
    ½ cup crumbled queso fresca (crumble the cheese, then measure)
    1 fresh tomato, chopped into ½” pieces
    4 ounces guava paste, chopped into 1/4” pieces
    4 ounces hearts of palm, chopped into ½” pieces
    1 orange, cut into segments

  • Mango Dressing

    ¼ cup mango puree
    1 clove garlic, put through the garlic press
    3 tablespoons cilantro, finely chopped
    1½ teaspoons freshly squeezed lemon juice
    ½ cup canola oil
    salt and freshly ground pepper to taste
    u Whisk the first four ingredients in a small bowl until combined. Slowly whisk in the oil, whisking until an emulsion forms. This dressing will be thick. Taste and adjust salt and pepper.
