  • Homemade Candy Bars

    Ingredients
    2 cups unsalted walnuts (or the nut of your choice)
    ½ cup flaxseed meal
    ½ cup shredded, unsweetened coconut
    ½ cup natural peanut butter (or the nut butter of your choice)
    ½ teaspoon salt
    ½ cup coconut oil
    1 tablespoon light agave nectar
    1 tablespoon vanilla extract
    1 cup dark chocolate chips

    Directions
    u Line an 8×8-inch baking pan with foil, set aside.

  • No Junk Food Granola Bars

    Ingredients
    1 cup old fashioned rolled oats
    ½ cup crispy rice cereal
    3 tablespoons oat flour (You can make your own by grinding old fashioned rolled oats in the food processor; measure after grinding)
    ¼ teaspoon salt
    ¼ teaspoon baking soda
    ½ cup coarsely chopped, unsalted almonds
    ½ teaspoon cinnamon
    2 tablespoons coconut oil, melted and slightly cooled
    3 tablespoons light agave nectar

  • Taylor receives U.S. Navy commendation

    U.S. Navy Lt. Cmdr. Corey Taylor, a Lancaster native, was recently awarded the Department of the Navy and Marine Corps Commendation Medal for meritorious service while serving with Mine-Countermeasures Squadron 7, in Sasebo, Japan.
    A 1987 Indian Land High School graduate and 24-year service veteran, Taylor served as the squadron’s operations officer from August 2010 to February 2012.
    Squadron commander, U.S. Navy Capt. Dan W. Brune made the presentation in February.

So much goes in to making a memorable Easter feast – the yummy ham, creamy deviled eggs, all the savory sides – but at the end of the day, it’s always been the cheerful sweets that have caught my eye the most.  

  • Christian Services opens new location

    In an effort to provide more efficient service to people in the community, Christian Services recently opened a new food pantry on Lynwood Drive.
    The new facility, which takes the place of food pantry services offered at Christian Services’ location on White Street, opened Feb. 20. Operations manager Eric Kramer said high demand and limited space made a new location necessary to provide the best possible service for those who need the help the food pantry offers.

  • Nurse receives dhec award

    Hard work, perseverance and effort are just a few words that describe Leanne Bailey.
    Now, the Lancaster resident is garnering statewide accolades for her dedication to her job.
    Bailey received the S.C. Department of Health and Environmental Control’s Health Services Monthly Award of Excellence for February 2012.
    Bailey is director of the Immunization division for the state Bureau of Disease Control.

    On March 12, Girl Scouts will celebrate its 100th anniversary.          And for a little more than 80 of those years, many of their troop activities have been funded by selling cookies. 

    Those cookies – Thin Mints, Shortbreads, Peanut Butter Sandwich, Peanut Butter Patties, Lemonades, Shout Outs, Thanks–A–Lots and Caramel deLites – become household words this time of year.

    Made with corn and peppers, maque choux (pronounced “mock shoe”) is a fun Cajun twist on New Orleans-style jambalaya. And  with Mardi-Gras , (the last Tuesday before Ash Wednesday, Feb. 22), just days away, it may be a great way to celebrate.

    1/2 pound andouille sausage, cut into quarter-inch slices  

    1/2 cup chopped celery 

    1/2 cup chopped green bell pepper
