¼ cup mango puree
1 clove garlic, put through the garlic press
3 tablespoons cilantro, finely chopped
1½ teaspoons freshly squeezed lemon juice
½ cup canola oil
salt and freshly ground pepper to taste
u Whisk the first four ingredients in a small bowl until combined. Slowly whisk in the oil, whisking until an emulsion forms. This dressing will be thick. Taste and adjust salt and pepper.
u This dressing is a little sweeter than most. If you like more “tang” to your salad dressings, add more lemon juice.
